And speaking of doing it the right way…

Last week, I gave a workshop at Sterling College - a small, progressive college in northern Vermont.  I began by cutting up half a pig, demonstrating as I went.  Then the group all took turns cutting up the other half.  They did a great job… even learned the Butcher’s Knot.  

One of the participants was the wonderful Jenn Campus – co-founder of The Foodie Blogroll.  Here’s what Jenn had to say on her blog The Leftover Queen.
